GROUND CHICKEN AND EGGS

Place the onion, garlic and carrots in a food processor and process for a few seconds until the mixture is finely minced but not pureed.
Blend well with the chicken, and add salt and pepper to taste.
Preheat the oven to 350 degrees.
Arrange the meat and vegetable mixture in a shallow wellbuttered casserole, and bake for 45 minutes, until top of mixture is golden brown.
Beat the eggs well and pour them on top of the chicken.
Cover the casserole and bake for another 10-15 minutes, until the eggs are set.
Serves 6-8
This dish is good with a fresh tomato-cucumber salad.
